A recipe idea from our chef
"Krautspätzle" [Spätzle noodles with sauerkraut]
Ingredients: 500 g flour, 4 eggs, 1 level tsp. salt, water, 1 tin (750 g) sauerkraut, 100 g smoked belly of pork, 1 small onion, lard

Preparation: Make up the spätzle noodles using a basic recipe. Dice the onion and pork and brown lightly in the lard. Remove the sauerkraut from the tin and add to the mix. Cook until golden yellow. Lightly brown about the same quantity of spätzle separately and when cooked mix in to the sauerkraut. Dust with pepper if required. Serve hot. Ready-cooked sauerkraut can be used instead raw cabbage.
